Title: Citrus and Cilantro Grilled Lake Trout

Yield: 4 Servings

  Zest and juice of 1 ea orange and lemon
1tbOlive Oil
1tsMustard
4 Lake trout steaks
  Seasoned Butter:
2ozButter
  Salt
  Garlic powder
  Black Pepper
  Cilantro or Parsley; finely chopped

Grate the orange and lemon zest. Blend together the zest and juice, oil and mustard. Pour the marinade over the steaks in a shallow dish and marinade for 1 hour.

Meanwhile blend the butter and seasonings. Place on a sheet of foil and roll up in a log. Chill until firm then cut into 8 rounds.

Drain and grill the steaks 4-5 min per side over high heat, basting occasionally with the marinade.

Serve with the cilantro butter rounds.
